But unlocking a new perk that unlocks this produce, actually gives customers "priority" in buying/requesting that item. I've noticed for as long as I have just recently unlocked something, that will be one of their "top" items on their list
So ignoring this item and not stocking it, actually gives you less sales per day, so I wouldn't unlock something if you can't or won't stock it. That's just me guessing though
e.g. when I unlocked Diary, all days post unlock, they were buying out yoghurts
then I unlocked, things like Dog/cat food (forgot perk name), they stopped prioritising yoghurts so I stopped heavily stocking it, and started going for canned stuff all the time. Probably works something like that, maybe it evens out at some point

Best to save up before getting a new product line, then dump hard into it.
