Are you using are monitor?
Some monitors, depending on the model and price, does not come with the full range of the colour spectrum, so that might be the reason you are not getting the colour you want.
I get that too sometimes because my monitor is only a gaming mid-range budget one.

You need to be using the metallic custom colour paintjob to get the metal flake effects.
That will give you three colours to adjust, the first of which is the base colour, the second is the flip colour and the third is the metal flake colour.
The 'flip' colour is the secondary colour for a pearlescent paint, if you don't want that effect then just set it to the same as the base colour.
