Any way to change the files for ATS on the local C drive?
Is there any way to change the files for ATS from the Documents folder (C:\Users\[your name]\OneDrive\Documents\American Truck Simulator) to a different location? Not just the mods folder, but the rest of the files, like the cache file, the music file, etc. Any way to do that?

in file explorer > documents>new folder.rename new folder whatever you want>right click>attach new folder to quick access >drag file across into named new folder.

I also suggest keeping ATS files off of OneDrive. OneDrive likes to move the file path around which makes the game lose track of its data. You may find that some day your profiles will be "gone" because OneDrive has somehow messed up the file path. This can be fixed, but is annoying.

1. Choose or create a folder as a starting location (for example D:\Games).
2. Right-click American Truck Simulator and select Properties
3. On the General tab, right side, there should be a space to enter advanced launch options. Here you will need to type in the fully qualified path to where you want your files to live. For example, you want the files to be in a folder called "Games" on the D: drive. In the Advanced Launch Options box type -homedir D:\Games
4. Launch the game and create a new profile (do NOT use any existing profile names). This will create the file structure under D:\Games and point the game to the new location(you'll have D:\Games\American Truck Simulator\ and all the sub-folders created for you).
5. Exit the game.
6. Open two copies of File Explorer. Point the first one at C:\Users\[your name]\OneDrive\Documents\American Truck Simulator. Point the second one to D:\Games\American Truck Simulator.
7. COPY (do NOT move) the files and folders from C:\Users\[your name]\OneDrive\Documents\American Truck Simulator to D:\Games\American Truck Simulator. When asked if you want to replace or keep a copy, select Replace.
8. Launch ATS and verify all settings and profiles. Make a manual save on a profile and verify that it updates in the new location, not the old.

Once you are comfortable that everything is working as it should, you can archive or delete the original folder on OneDrive.

The correct and proper way to change location of those files specifically is using the
-homedir launch parameter.

Usage:
-homedir "D:\your\directory\here"

The following would create a directory like D:\GameData\Documents\American Truck Simulator\ with all the stuff you'd usually see.
-homedir "D:\GameData\Documents"

The line goes into the menu when you right click the game in your library > Properties > Launch Options.
