That's why I play with a blindfold on. ATS is way more challenging this way and I am constantly finding myself making turns that I don't even need, or want to make. Works like a charm.
This also takes care of another issue with ATS, it's screwed up economy. Play the game my way (with a blindfold on) and just like irl it'll take you years of gameplay in order to purchase your first truck.
I've been playing for several years now and I'm still trying to complete my first delivery.
ATS economy problem solved.
Trust me, a blindfold works like magic for this game.
Another thing you can try is only driving in reverse. I hear that adds challenge to the game as well.
My real pet peeve with ATS though is this: Who keeps knocking all the street signs down? SCS will never be able to complete even the lower 48 if they have to keep spending so much money on sign replacements and repairs. Geeze Louise!

With world of truck deliveries you have plenty of time, but my employees makes so much money I don't have to care if I am late or don't get paid for my delivery, i just drive for fun 😊
The problem with this however, would mean more detailed and diverse cities and towns. Which would require tons of work to do with even a fraction of the cities in the game, and balloon the game to an unimaginable size. Basically every city would have to be its own, huge, detailed freeroam map, and thats just not feesible for any studio basically mapping the entire country, let alone a small indie one. That is way games like the crew felt so empty.
The american interstate system is rather boring in all honesty, and its also where long haul drivers spend the majority of their time. Which is good for a game like this, as they can focus more on general enviroments in specific parts of the country, which helps keep dev time lower, with little detail and size to the actual cities themselves.
Once they hit the mid atlantic/northeast regions there may be a bit more city driving and variety, seeing how clustered and condensed everything is there. Until then though, there are alot of mods out there that can change up the maps, trucks, and deliveries. Or you can do what others have suggested, and make your own routes and make it as hard or diverse as you want.
