If that doesn't sort it, then:
Please post your complete game.log.txt file from after the crash to http://pastebin.com (copy/paste, split the game.log.txt if it is too big) and post the link to it here please. This way we can find out what the problem might be.
You can find your game log in your documents in the ATS folder as a default install on Windows. (If it is not there check OneDrive.) On a Mac the ATS folder is in your Library and there in the Application Support.
If pastebin is not available in your country please use http://rentry.co and post the link to it here please. The page works like pastebin.
Also, nearly half of your system memory is already being used when the game starts:

...you may want to look at what else is running and see what you can stop in order to free up some memory.
Verify your game files. You can do this by doing a right-click on the game in your Steam Library and going to "Properties". There you go to "Local files" and there should be the option to verify your files. This will fix any missing or corrupt game files.
Mods = potential problems
Lots of mods = LOTS of potential problems
It is right on the launch screen every time you start the game, when you run mods.

Mods are unsupported by SCS, they are entirely your responsibility.
Start a new, unmodded, vanilla profile
(you can have as many as you want) and test the game. If it does not crash, it's most likely your mods causing the problem. You need to test and check every mod individually to see which one is at at fault.

Is your computer using OneDrive for the default Windows "documents" folder, even if you did not ask it to?
Windows will use OneDrive as the default documents location and ATS/ETS2 will not run correctly if it does so.

The "home" directory for the game should be the documents folder on your C: drive.
Change this line in the config (or config.cfg) file:
00:00:00.xxx : uset cf_asus_aura "1"
00:00:00.xxx : uset cf_razer_chroma "1"
Change the "1" to "0" (zero) in both lines and save it.
You can find the file in your documents in the ATS folder.
Running a graphics intensive game on a weak laptop with lots of mods and other third-party add-ons is a not going to be a good experience. Laptops/notebooks aren't designed for gaming, even the ones that claim to be "gaming" laptops are not as powerful as the equivalent tower PC.
The IGPU is not equipped with enough VRAM, (only 2 Gb) so it is likely to be using slower normal system RAM as well,l in order to be able to render the GFX, causing memory problems and crashes.
Start with trying a vanilla, mod free profile, get rid of all the plug-ins and don't use high settings for GFX, reduce the number and detail of mirrors, turn off SSAO, don't render above 100% and hope for the best.
ATS will never run as well on a laptop/notebook, as there will always be compromises, and not using mods/plug-ins is going to have to be one of those compromises, 172 mods could kill the game on a new gaming PC, never mind a laptop.
Get a graphics card with at least 6 Gb of VRAM, the newer the better. You will have to ensure the mobo and PSU can cope with a recent GFX card in terms of PCI slot spec and power draw.
The CPU is still weak, but the IGPU will never be good enough for gaming. That system was never designed for gaming, it is a home/small business spec machine. Upgrade the case cooling as well if you fit a new GFX card.
You still need to follow the rest of the suggestions, especially OneDrive and mods/plug-ins.
Is this all in one liquid cooling or an air cooler?
You will have to re-direct the game to use the documents folder for the "home" folder location, for all the ATS profile and config files, NOT OneDrive.
Keep OneDrive but do not let ATS use it.
Add this:
-homedir "C:\Users\*your username*\Documents\American Truck Simulator"
to the start properties of ATS, there are guides on here and the SCS forums on how to do this.
