wheel, similar to game pad... but if its hardware not game setting id have 0 clue if you could get in there to clean what needs cleaned if thats even a potential cause... ive never had a wheel.
keyboard, might have a sticky key maybe?
mouse, might need to clean it... maybe your hand is drifting and you dont notice... or possibly if its a thing the axisesus need adjusting
(I use keyboard to steer [taptap tapity tap] and while i used mouse steering in ETS2 i never had the veering drift issue)

For OP: Where do you have the slider for Driveshaft Torque set? When pulling heavy loads, this can cause the truck to pull to the right during acceleration.
