Report a translation problem
1) Is it not enough for you to move way backwards (from screen) and then hit "reset"? That usually takes me back up to the wheel/correct position.
2) Have no idea. For me it sits correct in front of me. Although when "ESC" out to menus, info screen is slightly tilted (20 deg downwards) but that does not bother me.

The virtual mirrors and GPS stuff being off for me is definitely not meant to be.
I'll try this seat mod you posted. At least that solves half the issues.
1) I've noticed this too in some trucks. Adjusting my seat in game helped some (F3 menu), but often my solution is to lean back (or scooch my real chair back) then hit reset and return to a normal position.
2) Virtual mirrors being off to the side is a function of the position of your VR sensors. I don't know how the Quest 3 does it precisely, as I have an Index. Unless my IR emitter is directly in front of me, the various UI elements like mirrors, pop up menus while driving, and the "saving..." element will be aligned with my IR emitter no matter what I do.
If the Quest 3 uses the room to decide your position, this could be more complex. You may need to recalibrate your setup or some such. I assume that there is a setting that decides what is forward. This may be what is causing that UI to be off to the side.
All that being said, there is some stuff you can do in your config file.
Open your config.cfg file (located in C:\Users\<username>\Documents\American Truck Simulator\ ) in something like Notepad++.
Look for these settings and adjust them to settings you like. The pitch, yaw, X, and Y settings are for the main menu. The same settings with "_game" after it are for your GPS position. My settings will place your GPS UI window almost precisely over your truck's GPS, with a slight angle for easier readability.
