VR would be cheaper, and generally superior, but the cheaper sets have FoV at about 95-110 degrees.
Also worth considering that when you increase resolution (or go VR) the hood mirrors become more useful so seeing from side mirror to side mirror at the same time becomes less important.
In theory, yes if the width is the same resolution/aspect ratio as you use know.
Practical it most likely depends on the multi config and if you can set the Position of two monitors so that the Center of the screen would be.....more to the right.
Easier and more cost efficient solution would be to use a head tracking device with 1 Monitor.....
