Can't get VR to NOT be theatre mode with Quest 2

I've scoured the forums and youtube for hours now.

Quest 2
Using Virtual Desktop
Beta 1.50
F11 doesn't do anything literally
Disabled any options related to theatre mode in Steam VR

Game plays fine, but i'm not sitting in the cab or have any 3D menus . . it's purely a big projected screen in front of me . . . .

I just fiddled with ats for the last 2 days getting it to work right with the quest 3. Make sure to add -openxr as a launch property and launch with dx11 when prompted
