Stuttering in VR?
Recently got a Quest 2 and I've been enjoying it with this game, but I've been getting random stutters here and there while playing this game with VR. I don't have this happen to me when I'm in non-VR mode. Is there a reason for this?

How can anyone tell, when you give no details of any of your system hardware or settings?
No-one can read your mind or see your view, so a bit more information would be helpful.
Remember, VR is not officially supported by SCS, it is an on-going project by an SCS employee, not part of the Steam version of the game.

The VR updates are always released separately after any game update, or patch, they are not included in the SCS updates. There can be quite a delay before they are available.

don't use SteamVR and switch to OpenXR instead.

Also if you go with OpenXR, the OpenXR Toolkit I recommend. I haven't tried VR in ATS, but use it in flight sims, and the OpenXR Toolkit give you a menu in game that allows you to adjust many, many options, including fine tuning the resolution to get the very max out of the headset. You can fine tune the resolution to get the highest resolution and FPS. It's not hard to figure out. The toolkit is actually developed by a guy on the OpenXR team on his own time, and he actually tries to get some of the things he's doing into the OpenXR official releases.
