Be sure that any mods that add truck accessories and the like have the parts sold off before deactivating mods. Leaving accessories on a truck and removing a mod that is dependent on that can and will lead to the game crashing.
Simple. Delete the mod from Documents/American Truck Simulator/mod folder.
If it is a Workshop mod then you unsubscribe from that mod.
