I had to bring my seat up and back a bit, no mirrors in view and a little higher feel for me.

You *are* sitting in the driver's seat. The driver sits in the left seat, *exactly* where your in-game PoV is. You can't 'see' the passenger side mirror in the real vehicles either without turning your head to look in that direction.
I don't think you can realistically do what you want. In the real vehicle, you have to tun your head to check the off-side mirror just like you have to in-game. In the game, the FoV you'd need so that you could see both mirrors in your forward view would be so high as to be practically unplayable (assuming a simple single monitor setup), with horrendous image distortion.
To do what you want, you're going to need to invest in either a multi-monitor setup, a head-tracking system or VR.
But No such Mod for ATS or am I missing something in your Help Post
That only works if you have a multimonitor setup with an extra wide field of view.
