If you want stronger then get a mod. I have seen Cat engines mods of 1500HP. Try that but not sure if fuel consumption is adjusted in the mods or just reaches a max for default biggest engines from the game - ??

Even in real life they are slow, even the fancy rigs with tons of money put into them, of course the game won't have unrealistic horsepower engines and instead caters to reality. I for one have a 455-horsepower engine in the new VNL that I am driving and yes it struggles up hills on certain loads, but it is plenty for what I take, obviously it will struggle on an oversize no doubt. I even drove trucks lower than 455 but I still never think about the engine as long as I hit highway speeds.

This is more than enough to pull a B Double loaded with Lumber, I was over 102,000 lbs and it was more than enough.
And besides, if you want a lots of power you will find you are speeding everywhere, running red lights, doing 90 mph on the freeway, so it's not realistic.
Drive like a real truck driver, slow and steady, you will enjoy the game much more
Here in Australia we have Prime Movers (Tractor Trailers) with over 1,000hp is not uncommon, however, they are not faster or more manoeuvrable.
The big Kenworths over here made specifically for Road Trains or Mining operations are there to pull massive load ( Torque ) well over 100 tons. That's over 220,00 pounds and that is the light ones
Look up Kimberley Mining operations, and you will get an idea of what Real Trucking is all about
Having said that, trucks are made for specific tasks, so in North America these are the trucks that do that job the best.
So it seems they don't exceed 700 to 800 off-factory?
