In real life, it's a driver's home while on the road.
Players that want to customize their own truck for immersion, fun or whatever reason can do that. It is cool to have a long tractor with a huge sleeper.
Having more axles and more driven axles also contributes to chassis weight.
Likewise, a daycab with a shorter 4x2 has an advantage of being very easy to manouver, especially in tighter places, which is why IRL we see these used in situations where they may make a local delivery, or a delivery in a tighter space. Of course with these, the driver usually gets to go home every night, or the company will pay for a motel nearby overnight if for some reason they can't be back home so the sleeper is not necessary.
It does make me wonder if we'll ever see those crazy Giant custom sleeper cabs. The original granddaddy of this game (Hard Truck: 18 Wheels of Steel) had a Kenworth K-100 that had one like that. They're basically an RV inside complete with kitchen and bathrooms.
Usually though those parts are more limited to things like bull bars, wheels and certain cab accessories.
Issue might also come down with these custom sleeper companies also not really having a standard layout. It's sort of how a lot of those camper trailers from smaller manufactures are usually made to order. Then comes making it work for every model that's in the vanilla game, and if every truck manufacture is okay with this when they licensed it (it took them a while to convince the folks we have now to get on board. For the longest time Freightliner was very hesitant IIRC.)
It has a possibility of happening IMO, but I'd imagine it isn't much of a priority. On the other hand, we these as mods which is always good.
Like you said, i think the unlikelihood comes from them being truly custom machines. There isnt a standard, and it isnt an accessory to the truck, it is a major change to the truck itself.
All that being said, mods have definitely done it before, and I am sure there is at least one available right now that is updated and working.
As are trucks with the short suicide cab!
