This is also the reason why never use the main profile in an open beta "just for testing" - you cant go back and get it to work in lower versions. The progress is locked in the higher version (In the saves done since upgrading the game version)
If YOU deleted the mod then you need to redownload it and sell all purchased trucks and parts relating to the mod. You may have to downgrade the game and hope you still have an autosave pre-update which as mentioned will remove any progress from that point.
If you have the skill to do a little modding, you can actually make the def files yourself and link the models to SCS parts. This should allow you to get into your garage and delete the affected vehicles.
