You can talk on the CB. It is push to talk and the key to use is X.
edit: Should add that I don't play Convoy so I'm not 100% sure if that is still correct.
Mods can be a royal pain to troubleshoot especially when you start crashing.
However you can create multiple profiles, so you could create (a) profile(s) specifically for Convoy and keep a vanilla profile for game progress.
As for the Convoys, there are Vanilla (no mod) convoys available, or you can start your own.
Some of their mods or your mods they don't have may make things weird, and I don't think there's an easy way to tell if a mod is okay to be optional at the moment.
For example, if you have a mod that changes look of some AI vehicles, other players in the same lobby may start seeing a transparent green cube on the road when you are near them.
A mod that replaces the interior of trucks is one of the types that won't make it weird to other players, but ones that do the exterior of trucks will do.
I believe if a mod changes the thing that only you will see it's safe to be optional. But there's just no way to tell at the moment.
