The various cab sizes don't apply any physical effects to the vehicles in the game. It *could* do, you could certainly mod the vehicle to allow for differing mass between the various cabs, but it isn't being done that way in the default vehicles.
You seem to have missed the over 2kNm part... by 625hp 'beasts' I'm assuming you're talking about big-block petrol engines... they're typically only making a maximum of around 200 Nm or so. A full order of magnitude below the class 8 diesels.
The bigger cab variants require a bigger chassis which has higher weights than the small one.
I guess... though the only difference in mass are between the daycabs and *all* the other cabs, regardless of how large they are. Having said that, there's only two sleeper cab options for each truck and the larger of the two just adds some aerodynamics which won't add a whole lot more weight anyway (relatively speaking).
Still, you're right of course, the smaller chassis on the daycab versions are lighter than the larger chassis for the sleeper cabs.. my error.
