And yes, there are some trucks in the game that takes turns more easily than others at 25 mph.
For which one and what setup works best, I don't know. I drive a T680 with the full cabin and have no problems with corners, but I am quite used to it.
AI traffic will always cause a problem no matter how well you take the corner.
People like the Kenworth W900 as it is the fastest. I personally prefer the T680. I feel it accelerates faster and much smoother than the W900. Being a little slower isn't a big deal especially if playing SP.
I haven't driven the Peterbilt 579 in a while, though I did start the game with that.(once the W900 came out, I switched to that as living in a Logging town, most trucks look like the W900 around here).

I wanted to buy a Kenworth W900, because it gives you an american feeling, but I see that a Kenworth with a Duty Cabin drives better.
Also I would like to drive a Mack, but I don't really know when it comes out.
Is Mack out in the game ?
I've made the today update but didn't checked if it's added.
Also do I need to find the dealer ?
I download Mack ultraliner from ats mod site, it works well
