Do the jobs that you're comfortable with. I've never done hard math to figure out which is more profitable overall because money isn't relevant in ATS/ETS2. A bit of extra bucks here or there per job doesn't really affect the overall game.
One downside to owning your own truck is you need to drive to the next job, usually without a trailer. On the other hand, driving around without a trailer makes exploration very easy. Owning a trailer can limit the types of cargo you haul, and make it slightly harder to find the job you want, but you can have a cool looking cutom trailer & truck paired up and be badass.
