Mods to drive a car all seem to have something wrong with the steering?
Or is that just me? I have no issues with my wheel when using a normal/modded truck, but I've tried several cars so far (Renault Clio, Nissan Qashqai, VW Scirocco and a BMW M4) and they all seem to sometimes randomly steer left or right on their own. I'm not touching the wheel at there they go. It really messes up my corners obviously. I got them from trzpro, atsmod and somewhere else I don't remember. Even seemingly well made ones with lots of configuration options. There is nothing wrong with my G29, it's barely a week old and this only happens in the cars.

I'm not even trying to race or anything, just wanted to have a semi realistic car driving experience but this is ruining it.

Do all the car mods I've tried just happen to suck? Do you know of a mod for whatever car (preferably an average/weak one) that works properly?

This game is designed for trucks. It does not work well when you try to drive a car, and this is not something that can be fixed by a mod. It is just the way the physics of the game work. Bring one of your cars to a weigh station for an example of what I mean. If I remember correctly, the Skoda from TruckersMP would weigh in around 18,000lbs. These car mods do their best, but you will still have to deal with truck physics being applied to a car.

So none of them are going to handle well? Drat

Not particularly. Some might be better than others, but none will be like a real car.

Have a look at the game "City Car Driving" ... it may be closer to what you want.

All vehicles will drive similarly to the boats that the semi-trucks are. This is an unchanging fact. The game was designed with only trucks being drivable. No matter how much a modder tweaks a car mod, it will still behave like a large truck.
