There's a truck race track at the end of a dead-end road in Tucson.
You can drive around inside of the Phoenix airport.

There's a few places with guys out mowing their yard.
There are actually tonnes of hidden easter eggs in the game, some fairly obvious like this one and others quite subtle or hidden.
I just found them here.. haha.. they kept going up and down
