In the early days if I had the room I would have gone for the 3 monitor setup but with limited space on my desk I chose the largest gaming monitor I could find at the time and the TrackIr.
It is always good to hear real life current and retired truck drivers enjoying playing the game and I am glad you can experience as close to driving a truck in real life using the 3 monitor setup. Enjoy the game. :)
TrackIR works with as many or as few monitors as you want - all it's doing is moving the camera/view point in game so as long as the game supports whatever resolution you're running then it will be fine.
I have used TrackIR and triple monitors for years with my sim games and I would struggle to go to a single monitor now.

Yes, money can be a problem. The games are extremely cheap and I often wonder about the complaints about the price of certain games but I do understand about needing to be frugal if money is limited. Hardware on the other hand is expensive and to play games it can be extremely expensive with enjoyment being the only reward. I am fortunate but not everyone is.
As far as desk space go, you can get a triple stand that streamlines the setup and doesn't have your edge monitors hanging off the side of your desk.

That's before I got my fov and such correct. And actually that setup is using 4 monitors, the bottom one using the Telemetry app for the gauges.
I bought two more and a mount and I couldn't imagine playing without 3 monitors anymore.
It shouldn't be required but it is HIGHLY recommended.
Well sure it costs more. But all games have "minimum" and a "recommended" requirements. And certainly the recommended hardware costs more.
For me personally, when I bought ATS I played it about an hour before I decided I wanted to get a wheel for the game. After I got it, and played it for the first time, I though to myself, this is the way the game's supposed to be played. I couldn't imagine going back to keyboard again.
For a long while after that, I chose my truck based on the readability of the dash and the in cab gps options. I never use the floating gps or side mirror windows, they're not immersive imho. It was a challenge to find the cab that looked just right.
When I got the three monitors, everything became clear, like it was always meant to be played this way. The fov's all seemed right, and just the whole overall feel of the game seemed more in proportion.
Can you play this game with a keyboard? Yes. Would I recommend a wheel? Yes.
Can you play this game with one monitor? Yes. Would I recommend 3, or something with a wider screen? Yes.
