Best settings inside cab?
I am using the default settings but it is hard to see my mirrors and at night it is very dark. I currently use a thrustmaster and I do not have trackIR as I havent purchased yet... Just looking for good settings so I can see more and make it more realistic.

Most people do seem to find the game to be very dark through the darkest hours of the night, if you choose to drive then you can benefit from just leaving your high beams on as there is no penalty beyond other drivers flashing their highs at you.
Lacking TIr, you might boost your FOV a few degrees above what it should be, sacrifice a couple of wheel buttons to pan left and right, and find a setting of camera following steering that suits you. For maximum look left and right, for example at a stop sign, I think the mouse works better than wasting wheel buttons.

With TrackIR, 1 monitor, I have my FOV set to 75-85. Without TrackIR, I have FOV set to 90. I move my seat pretty far forward, and adjust the FOV and mirrors from there.

I'm using a small FOV setting (66 currently) so that the screen shows as much as possible of the outside world and not so much of the roof and the dashboard. And I turn my head a bit to the left so I can see the left mirrors well. To look left and right, I press either the "left view" key or the "right view" key, and after that "forward view" again.

I set a keybind for Interior look left and Interior look right when I use my wheel. It instantly faces that direction and then set another for regular interior cam and that will set you back straight. I am not sure what else you mean.

Play around with settings to find something that fits you.
There is no universal 'realistic' setting as we don't know your screen size, your distance to your screen, and your 'feeling' towards optical distortion vs maximum FOV.

I had used something around 75° depending on truck on my old 16:9 screen.
I moved first up to 90° when i got my 21:9 monitor, but then i went back down to 85° because it caused irritation and even a little bit of motion sickness.

On old screen i sometimes used virtual mirrors on both sides, especially with Argosy, but most of the time only right side, and adjusted seating position to see left mirror.
Now left mirror is no problem at all, i even seem to must move seat in most forward position, and virtual right mirror is there because i don't want to use numpad&different view just for checking.

I don't think there is a "Best" when it comes to the cab. It's a pretty subjective opinion and you're likely to get a different answer from just about everyone who answers. Having said that, I couldn't imagine using the default cab settings after having found my preferred layout. Just play around with it until you find a setup that works best for you. What works best for me may not work for you. It is very much personal.

My layout is like "The_Mell" has in their picture. I use the upper right mirror and slide my seat all the way back until I get the entire driver side mirror up against the border of the screen adjusting the FOV after the seat is back as far as it can go. I also don't like to sit too high as it kills the view for me so I usually drop my seat down a few clicks. From there I will adjust my steering wheel so that my most needed dials are not blocked.

Each cab is different so you'll have to do this with every truck you drive. Thankfully the settings are remembered for each individual truck you own so you won't have to keep re adjusting from truck to truck.

As far as the darkness goes. At night it's supposed to be like that. Unless there are street lights or other light source you're going to have a hard time seeing mirrors.. That's sim driving for you.

I'm sure it's been said, but I will say it again. F4, change fov so you can see what feels correct for you. Most trucks fov is far too small at default settings. The newest truck is by far the worst offender.
