For your 1st suggestion when I open userdata I don't have <YOUR STEAM ID>\270880\remote, I have a different folder with just a number.
In your 2nd suggestion Profiles folder is present but with no folders or files
Profiles folder is present in 'One Drive' but with no folders or files
Upon plying the game today I noticed in the menu of box displaying my truck Profiles, I then went to edit and found that Steam Cloud was ticked. Does this explain the reason for emty 'profiles' folder on my pc.

Just to add: Any profiles which were created before 1.33 are not automatically on Steam Cloud. If you want to put them on Steam Cloud then that is done in the Edit Profile on the Launchpad. Any profiles created after 1.33 are automatically saved in Steam Cloud and you need to uncheck the Steam Cloud saves in the Edit Profile if you do not wish to save the game to Steam Cloud.
Yeah I just checked ETS2 and it ain't ticked and the save folder and files are in 'profiles' folder and backed up to Google Drive.
Would you recommend i use Steam Cloud for both games?
I don't use Steam Cloud because I like to save the profiles manually and have done that for a long time. I also like to be able to alter things in the config files. However, if you like your game automatically saved and don't need to alter the config then the Steam Cloud is a good choice. It is a personal choice so I can't advise you one way or the other, it depends on how you play the game and whether you like to be able to alter the config files or not.
Steam Cloud would be easier to back up from though wouldn't it. Rather than Google drive r One drive, if something went wrong
Yes it would. It had been requested for a long time as many players had lost their progress not realizing the games were not saved in Steam Cloud. So now the games have it and those problems should not occur again.
Yeah good idea because before I bought ATS my ETS2 folders /files got corrupted & I had to start all over again
