How do you get escorts on oversize loads
I've seen streamers being escorted by highway patrol and escort trucks. Is that just on multiplayer

No it's on single player as well. Select a load that has a sort of red and white barber pole symbol on it. You must also own the "Special Transport" DLC

As KittyKat said.

The escorts are part of the Special Transport DLC. If you don't have that DLC you won't get the escorts for the appropriate cargo's

i didnt own it but one day it showed oversized loads, after that it never showed up again

If you mean the in-game E-Mail then this was a bug. You still need the DLC to actually take this kind of cargo.
