What exactly do you want to extract?
The tool itself is only meant to extract the basegame directorys .scs data.
And that can be easily done by drag & drop them onto the extractor.exe (would put that and a copy of the .scs file in a extra folder....otherwise the will be extracted at the location of the file).
Your best getting ETS2 Studio.
It's built in and has a user interface,

Make a new folder, and use the extractor it to extract the that new folder.
What are you using to extract? the command line version or the ETS2 Studio?
