When getting the full game, you can continue seemlessly from where you stopped in the demo. It did not update or download any game files when I did the upgrade from demo to full version.
As I did not play the demo since the rescale, I cannot comment on the demo playing on the non-rescaled map. As the whole map seemed to be part of the demo - just not available for driving on all roads- I would be surprised if you suddenly had to more or less re-install the game with the new map now.
Demo was just California but the max was 8 loads you can take across the country. Full version includes California along with Arizona and nevada and unlimited number of loads you can take. If you want to go more places you have to pay for the real game. I played the Demo for 1 month after it was released before I purchased it in March, and I'm telling you this its more fun to have more roads and states to explore instead of having to play no more but 8 trips and and just have California.
I suggest you buy the game if you want the full experience of the game.
