Report a translation problem
If a hunter sanity reaches zero, it becomes night and the player deer become monsters to kill the hunter.
Yeah ok, so... why? Why would a hunter's sanity go down from killing a deer? Isn't that the purpose of hunting? Surely seeing a deer walk on two feet would be worse for one's sanity than a deer being a regular deer?
Like I said, I understand how this can be forced into "working" through gameplay "features" like that, but it still makes absolutely no sense as a setting for a game like this.
And yes, I know the real answer is "because the game needs to happen" and it's a comedy game by a couple of kids who don't understand the basic premise they're trying to copy and why it works in other games, but that's kind of the point.
because it's a video game, you could literally find a "but why" to every damn game in history

if you need a reason, he's a vegan hunter that only hunt monsters and killing innocent deers makes him sad

Some of the deer are possessed (the players) and the Hunter needs to kill them.
If he don't manage to do that before his sanity is fully gone his madness takes over and the possessed deer hunts him.
It's not that deep people ;)
