Are trees eternally thirsty?
Do we ever have to stop watering them, does it even serve a purpose?

When they are fully grown and can pull out the seeds, you no longer need to water them

it should give you more seeds after taking the seed and watering again

none of my trees let me water them again after collecting the seeds, it'll still show the watering animation, but it doesn't actually show or fill the watering gauge.

the watering gauge seems to be broken if you're too close to the tree or your line of sight is interrupted, listen to the sound while watering, it'll do the *glugGlugGLUG* sound like it would if you could see a gauge

Nope gauge isn't broken, it's just the opacity of the gauge is dependent on the camera for some reason, poor ui choice, all the plants do that.

If you can't see it when you should then this sounds broken to me

Change your camera angle and you can see it, albeit sometimes still too faintly. Like I said before, really poor ui decision on their part so technically not broken, but yeah it's broken. That's like being able to turn on / off a light when you're not standing near it but the camera is.
