Tomato plants get you 8 to 12 tomatoes per plant over 10 days, so between 0.8 to 1.2 per day. The processing time to preserve them is 27 minutes, half that of potato.
This means that assuming none of your equipment ever runs out of processing ingredient you produce 2 jars of tomatoes for each jar of potatoes, nullifying the increased price. Running the full field my 15 preserves jar never run out of ingredient, I even still have too many tomatoes being produced.
