I saw someone else posting the other day that they only get star quality crops when they reach lvl.30 for Farming, and someone also mentioned they make more star quality dishes with higher Cooking, so I assume the lvl of your skills do direct impact on the game mechanics instead of just unlocking new features. But what does leveling all the other skills do for you?

Leveling up gives you access to better tools and such but once you hit level 10 you start gaining guild tokens for each respective skill/guild that can be used to buy items or decor that is otherwise difficult/unavailable to make yourself. The most important thing is your focus bar at the top, keep it full, the more focus you have the better, this with help get you leveled up quicker and may also get more quality items from things, just from what i've noticed. As for star quality crops, you can get them at any level, for better odds of star quality I recommend using "Quality Up" fertilizer on crops which you can get from the farming guild with guild tokens or from worm/glow worm farms by feeding them certain things. Hopefully this helps some.

Hey, thank you very much for your reply, that was very detailed and helpful. However I think there might be some miscommunication in my previous wording. In the other post the person was saying when he/she reaches lvl.30 on Farming he/she was ONLY getting star quality crops no matter what seeds was used. So my main concern is whether or not other skill levels have a direct impact on the game mechanism, for example, does Mining skill level affect the amount of ores dropoped, or perhaps the drop rates of silver/gold/starstone?

There's no added benefits to upping a level past 10 aside from the farming skill, for the star quality seeds. You do get trophies for getting your skills to certain levels and I believe in the guild stores some items require a higher level to "unlock" so you can buy, but those are it. So a high mining level doesn't affect the ores dropped or whether you get a higher drop rate in silver, gold or starstones. Silver, Gold, and Starstones are just RNG.

You have to get your levels up so you can buy the new premium gear in the cash shop. How else are you going to be able to buy the new content S6 is putting out at break neck speeds?

You need level 20 to get everything from the guild store, and level 50 to get the gold trophy. Other than that, there's no other benefit other than getting medals and renown every time you level.
