it just speeds up reaching the levels of friendship you need for certain parts of questlines to pop. since friendship needs to be reached for the keys to enter rooms, you soon find yourself figuring out what they want and at least gifting them the weeklies.
as such increasing skill level improves the item quality you get from farming, hunting, mining, etc.
in addition harvested crops are more likely to drop seeds at higher skill levels, and things like gems will appear more often while mining at higher skill levels.
there is a good benefit to increasing skills.
plus, you'll reach the skill of 10 on many skills pretty fast over a few weeks of playing daily, so no worries about the grind being too intense.
