Or do you mean "flipping" the pan? You hold the left mouse button until you reach that small circle, there you release the mouse button (this is bugged when the circle is exactly at the top (at 12 on a analog watch).
If you play with a controller it's the same button that you use to chop ingredients.
OR do you mean the whole process? You need to prepare the food on a prep station, then add it at the stove, then stir or flip.
One thing worth noting that I haven't seen yet is some dishes will require more than one stir/flip.. So always check the stove you started the recipe at first to see if you need to come back after chopping/mixing a couple of things. If you fail the mid-way stir/flip, you can still make the food and even get star quality, but you will get less items. Instead of 3x, you get 2x.
