For this maintenance, servers should be coming back up as I type this.
Been an IT person longer than most of ya have been alive, and this is a question I get asked multiple times a day, and the answer has not changed in 40 years:
It will take as long as it takes to complete.
Typical maintenance windows are 30 minutes, 1 hour, 2 hours, 4 hours, 8 hours or 24 hours.
This could be any of those, or none of those at all - just depends what they're doing. Log cleanup? Maybe 20-30 minutes. Windows updates - these are only ever shown in Microsoft Time, where 1 Microsoft Minute equals 60 seconds, plus or (rarely) minus 90 minutes, so could be a few minutes, could be a couple hours, could stop updating mid-update and sit there with an xbox status ring going around and around for days until someone doesn't listen, does turn off the computer and turns it back on for it to complete in seconds.
That's as much as anyone knows.
