Iron, Palium, and Stone are spread throughout the Bahari Bay map.
Copper is infrequent all over the Valley map at all times.
What you do get however are small areas that spawn mining nodes heavily but these areas move around so you will have to search for those areas. IIRC one day you can find 20+ nodes around the house on the hill (Mayors house? near fishing dock?) and then there might be a couple around there for the next few days before once again there a lot there.
Same goes once you move to the Bay area for iron etc - there is nearly always one area that will have many nodes at any one time but it moves around.
I don't know the timing or how long they stay in the one area sorry.
basically if you can stand still and only see a couple of nodes then you are not in the right place. You can spend all day running around those spartan areas getting stuff all or go looking for the better area. Up to you how you want to play.
If you are going mining and just starting the game I suggest you mine EVERYTHING that you pass as there is a chance for gems which (pre last update nerf?) were a great source of cash and if you have the storage you will probably find yourself needing all of them at some time.
If you have the resources, I recommend just using a miner's compass. But if you're just starting, you might as well just explore on your own.
