Should I level up till the last ability or I should change whenever I get to 20? First time playing dq3 sorry veterans

It depends on what you want and how much grinding you're willing to do. leveling 1-20 isn't bad at all later on. many spells and abilities have you waiting a while though. Mages Priests and Sages for example finish learning spells in the early 40s.

I do have a Male Thief that turned into a Warrior at the moment. As a Thief he finished learning everything a Thief can learn at level 33. That's probably the fastest a vocation learns everything if that gives you an idea

1-50 is not too bad of a grind and good stop off point to class change , you get all skills unlocked and a decent amount of stats to start your next class with. Anything over lvl 50 is long grind , and there are 0 skills to learn for any class after that point.

So if you can find a decent spot to grind exp wait till lvl 50.

Stopping early made sense in the previous versions, cause apart from mage and the priest, other classes either learned everything before 20 (thief and merchant) or didn't learn a thing (warrior and martial artist). And sage class learns every spell from both mage and priest's spell list so it was mostly fine either way. Getting more levels only made sense, in case they wanted to have higher stats on those characters, since changing vocations halved their current stats and put them back on level 1 but now it's sensible to level up till they learn everything, cause the new skills are good!
Grinding to 40/50 before reclass will probably leave you comically overleveled for everything. You can reclass at 20 and still be fine on Draconian. Don't overthink it.

There's a difficulty spike on Draconian right when you get the ship, but it levels out quickly. Game over only costs money. Zoom costs 0 MP and you have a bank. Don't lose sleep over a party wipe on the field.

Martials can reclass whenever. They just want more level ups for more HP. and they get weapon arts from whatever they're on.

Wrangler should stay until you're done recruiting monsters. Monsters will run if you don't have a Wrangler in active party. A former Wrangler doesn't count.

Mage should change after 21 for Oomph.

Priest can go to Sage right away. Otherwise, reclass Priest to something besides Sage after Multiheal.

Anyone who reclasses to Sage can park there for rest of the game.

Oh I get it! I’m playing on normal (my first time playing dq3) has been easy because I’m using seeds and exploring everything but I’m not sure if I can deal with hard mode haha! And about the classes I really like merchant and thief maybe wait to get their last abilities and move on to another class

Oh and turning a Mage or Priest to a Sage can be done earlier that works fine since Sages end up learning all the Mage and Priest spells anyway. For Mages waiting til Oomph and Possibly Boom isn't bad though
