COULD they do it? Yes.
Would people like it they did? Yes.
There's no gotcha here about people praising the option, because....so what if people would be praising it? How is that relevant to people being ok or even preferring the way it is?
But why is there this weird assumption that "well they could X so why didn't it?". This is hardly unique to this game, I see it over and over. As if every single little "X other game did this so why didn't this one?" means somehow there was laziness or whatever else.
Game development isn't as simply as 'add thing to game'. There's a huge balence to be had based on budget and time. And of course creative decisions. I actually find your argument here ironic given how against the inclusion of some things you don't want you are. Or have dismissed (for instance I seem you remember you mentioning how the Treasues & Trapdoors minigame was pointless so it's fine it's not there)
The old maxim, I'm sure you've heard it, comes to mind:
"You can please some of the people all of the time, you can please all of the people some of the time, but you can’t please all of the people all of the time".
I praise the developers who decided not to let players mess with the vision of the original game. The focus is on Toriyama's monster designs, not on the players. It is first-person for the same reason it was in the 80s; NOT because of technical limitation, but because of artistic vision and intent.

In fact I dont think the "improvements" are reflected in the price at all. Its overpriced, and the devs did not improve the game in robust ways that improve the experience.
The excuse "keeping it close to the OG" doesnt wash when you can add OPTIONS.

This version of Dragon Quest III is literally the best out of all of them and has so much more going for it
