I'd wait for this to be out for a while before buying. SE is really, really good at making remakes and re-releases worse than the original (see: Chrono Cross).
Dragon Quest 4-6 are also a trilogy though more loosely connected so it really doesn't matter what order you play them.
Outside of that 7, 8, 9, and 11 are all standalone (DQ 11 has a slight connection to DQ3 though it's nothing that's going to make any real difference as to which you play first).
And Dragon Quest 10 is an MMO (though there is also an singleplayer offline version). Neither has been officially localized for the west.
Thanks for the clarification. Let's hope that we get the other games as well.
Ultimately, it doesn't matter too much where you start, but DQ3 happens before DQ 1 and DQ 2 far as story is concerned. I feel like DQ 11 would be enjoyed more if it was done last.
Similar to how you can play Yakuza: Like a Dragon without playing any of the other games, but you will appreciate the nuances of some of the references far more if you had played the earlier games.
Considering what they're doing with DQIII HD-2D I'd imagine they're doing updated mechanics and new stuff for I+II HD-2D too. I can't wait to play all of these
