Is there a way to bind a button from my joystick to disengage autopilot? Specifically on a Toliss A319? There's the option for A/thr but not directly autopilot.

I know in-game from the sidestick you can disengage AP. I was hoping I could do the same with my joystick

Your trim tab key will disengage the AP.

Doesn't seem to work. Which ever trim setting I bind on my joystick button nor keyboard keys.

edit. I got it set now. Turns out there's custom commands specific to the Toliss aircraft on the lower part of the keyboard settings. I never came across it until someone else pointed it out.

There is a keyboard function to toggle servos, you should be able to bind a joystick button to that. When you do your search type in "servos toggle" and it should find it. But hitting the trim should disengage the autopilot.
