Instead uninstall it from within Steam, then exit Steam and look for the folder called
X:\Program Files (x86)\Steam\steamapps\common\X-Plane 11
Where "X" is the drive you installed Steam.
Delete the entire X-plane 11 folder. You'll find that many files will still exist there.
Then go to
C:\Users\USERNAMEAppData\Local and delete all files that start with "X-plane", where "USERNAME" is your login name.
Note that this is a hidden folder.
Ideally you would also clean out any registry entries too, but in most cases that is not necessary to correct crashing issues.
Are you sure you have no plugins installed that aren't what come with it?
Because one thing I've never seen the many years I've ran X-plane, is crashing on exit for no good reason (and that reason is almost always a 3rd part plugin).
Also, looking at the X-plane log might point you in the right direction.
Instead, cut/paste all custom scenery (stuff you have downloaded and installed), cut/paste all plugins and payware/freeware downloaded aircraft and move to a different folder and then go to steam and it can fix errors and missing files.
If the problem persists, then delete preferences folder (not joystick settings, obviously).
If it still crashes, then send me (or us) a log.txt with a document with your settings, your hardware/software set up.
You might be having an issue running out of memory even when exiting the sim.
