apparently the hawk t1 is supposed to be good and the f18.
I know those are fast movers and might not be to your taste.
I'm also after DCS quality military aircraft, big or small.

I'm still awaiting a Lockheed Constellation or a supported DC 6...
DCS and other military specific simulations are not much good if the interest is in the cargo and other non-combat military operations. DCS and other combat sims also tend to have rather limited areas where one can fly in. For example, if one wishes to fly a C-17 from Elmendorf AFB in Alaska to Yokota AB in Tokyo, DCS (for example) isn't going to help much.
Back in FSX days, I used to fly Saab J35 Draken in Sweden and Finland. Can't think of any combat oriented sim that would allow that, neither area or aircraft wise. There are a lot of interesting military aircraft out there, both past and present, which do not exist in any of the combat flight sims.
It'd be great if Laminar reworks their old C-130, complete with a 3D cockpit and all. That'd be a versatile aircraft to fly in various places and different types of missions.

not hating on dcs at all but it doesn't quite scratch my particular itch.

Also, some of the aircraft in DCS are the best ("mere mortal") simulatons available for said aircraft, most of them I bet by far (not even considering the weapons, ect.)
There aren't any great jet transports, but the Captain Sim C-130 is full of switches and systems (although some issues - ignore the rivet counters, it works fine in general) and is what you want.
It's not the latest glass cockpit version, but it's great fun.
To go more classic, get the Connie or Stratocruiser for prop transport action.
