I use both FSE and the newer Mission Generator, as well as (slowely) working through the Cat ratings on PilotEdge (an online ATC network). Between these I never feel like I'm aimlessly floating around!
Actually from my understanding x-plane' philosophy is that they provide you an open platform that is highly customizable, they also provide tools like plane maker where you can build and fly own aircrafts (afaik this was the main purpose of x-plane) or airport editors and many very technical stuff, like data output and input over different methods (like network protocols).
Non of these tools is made for typical start and relax gaming, it requires hours of reading instructions (or watching tutorials nowadays) and some professional level 3d modelling and texturing skills. Creating plugins require proper programming skills, this allow you building almost everything you can think about related to aviation (and even more!).
If you do not want to create stuff you can still enjoy x-plane as probably most of the users do, it also comes with some solid airplanes and even some basic experimental missions out of the box, but many additional stuff is provided by third parties.
I think they have enough things on their todo list they are aware of that can be improved or want to implement for the future.
This is exactly the reason why I also think it is way better if third party developers implement such things and not LR in the base product.

FS Economy is good because it gets you flying to and from airports you wouldn't normally be flying out of. Pus financing a plane over a few months gives you a reason to get in and fly every day.
I mean in term of fun, deep and stability? (free or payware)

I tried mission x and it is pretty awesome in my opinion. Mission Generator is cool too i think but yet not need the purchase just for what it offers more than the free one.
