VATSIM is the really the best place to go to put ATC into the game. Real people will beat AI any day of the week -- still in 2020.

It just got overhauled not too long ago...

Tried it for a couple weeks and bailed on it, truly an awful system.
This tells to me that you let a few bad apples at best ruin something that really raises the bar in your flight sim experience. If you ever have issues with a VATSIM controller you can leave feedback on that controllers ARTCC website or call up a supervisor while on the network.
If you're VFR and there is loads of IFR traffic and only one controller is online (especially a center) then it's best to use common sense and do your touch and goes at an uncontrolled airfield being mindful of any controlled airspace around you. It's much, much easier to do pattern work now that you can talk on 122.80 (any frequency can be talked on now). I've been denied a request simply because I was VFR, the controller was too busy and I understand that.
You're not always going to be on one frequency, sometimes controllers are stationed on different sectors within the area that you're flying. I've been handed off a number of times when under flight following in a little Cessna or Piper.
Friday Night Ops are loaded. I love when I connect to the network on Friday Night Ops and see the VATSIM pilot client just get spammed with frequencies, it puts a smile on my face and I have to double check my chart to make sure I am going to contract the right controller.
If you expect a non-profit organization to be staffed to real life values more often than not then you're being unrealistic. Nobody is getting paid to be a controller on VATSIM, they do it simply because they have a passion for aviation and they want to give to the community.
I very much higher recommend that if anyone wants to take their enjoyment of flight simulation to a whole new level they try out VATSIM. Most will never look at flight simulation the same.
It most certainly is, sometimes it's meme worthy and I save the clips via ShadowPlay. A lot of pilots love to drag out transmissions and I can't help but think controllers are like "Get to the point!" while looking at their radar screen loaded with aircraft.
