Almost all are provided in a PDF printable form. There are few missing in that list.

I am entirely new to the genre and still downloading the game. I suppose the checklists are just for roleplaying reasons? Or do I need them to give responses in game?
However, if you forget your landing checklist, and land with the gear retracted, you will crash the plane.
So it's really up to you to use checklists and not crash.

You can download Xchecklist from X-plane.org.
It will audibly read back your checklists and keep track of what you have done, as if you had a co-pilot helping you.
The checklists assure that you are following the proper procedures for the plane you are flying.
If you don't follow procedures you may find that you forgot to turn on the turbine bypasses in your plane and thereby killed all of the passengers... after which you'll notice the screen going dark as you suffer the effects of oxygen deprivation.... Yes X-plane models this...
