You can use money to buy pet food at the barn, which you can use to increase your pets levels; and therefore, your own stats. Pets have no level cap, so pet food is a better money sink, but it's not like you need to min-max to do well in the game anyways.
Ultimately, spend your money however you want.
The best place to grind for cash is in the Temple of Seasons. There's one room where enemies spawn indefinitely of all the enemies (the three seasons of wizards and knights). Combined with the money and drops and if you have efficient clearing time, you can make over 100k/hour.
You need a lot of cash to get items (not required however) from the Tai Ming area if you complete it and missed some treasure chests and get their content.
At each major step of the story, be sure to visit the archer south of town to get upgrade for your bow, it really increase the damage done.
You can spend some in the archery and with a good score get a better quiver to hold more arrows.
You can purchase treasure maps for cheap in town.
You can also purchase some gear in town to craft better equipment (gear required in some recipes have a small icon in the top right corner)
You can also spend money on food for pet if you don't want to go fishing.
You can sell extra copies of items dropped from monster to get more money. There's a reseller to get them back in town if you change your mind.
But most of the gold could be spent on housing items.
And yeah, I know housing isn't used gameplay wise, but I just love player houses, haha...!
