It's an amount of a singular hit you can take that doesn't cause you to flinch. Changing the threshold makes it harder to stagger you and will require heavier hits.
You can hold alt to garner more information from a stat with underlines.
Basically in this case if you have a lot of stun threshold you will be less likely to be stunned when enemies attack you. I believe threshold are also based on your max health relative to the damage inflicted so higher health characters will have an easier time too.
