I do think he actually played that properly and so does most people, I don't think a good souls player would come up with a build that has 99.9% weight encumbrance on a sorcerer and 2 shields. Doesn't mean he was good at it but also he didn't claim he was, game is not hard to beat with good weapons such as moonveil and summons or spirit ashes to soak damage.
