It's not a bad idea to view some videos, because the game could be a little bit overwhelming.

But of course one can easily choose skills from different weapons for your own builds. Witch is a great example for this because there are builds who actually can make use of a lot of sorceress skills. But both classes share the same starting point in the passive tree. So it is less of a problem. Long story short, it depends
I'm serious I feel vastly underrepresented imagine a world with that many characters and not one of them is at least some kind of queer. Sad honestly, the devs probably have no LGBT on their team. Why is the world going down this path...

As Nermal wisely said. Different starting points, ascendancy and voice with aestetics. Some classes even have different passive skills on the tree while starting in the same spot - Huntress vs Ranger. With different starting points, it might be easier to reach desired passive nodes you want, instead of trying to snake around the whole tree..
Understanding the whole system might take a while, I started my first character in PoE(1) thinking 'ok, I want to do magic' and I did start to look for caster builds, I finally settled on the most popular one, hierophant ice nova, but you don't have to do that here.
People usually do one of two things, they experiment with stuff or they follow more or a less a build someone put online. You can experiment without knowledge, but I would say, the game is a little bit harder now vs on the launch, so be warned if you screw up one too many times(you will be using gold to reset your nodes on passive tree and certain skills might need different itemization, so without items, currency[because you spent it on buying let's say] or gold..), it might be easier to just make new character.
If you want a powerful character, just find a 'meta' build. Streamers and theorycrafters spend hours to find out those and they become most popular in general, however, should you do that, also be warned, trading with others for popular build items will mean that you will have to pay a lot more.
Play those game for "modern Audiences".
Yout don't have to feel represented in this game, keep irl stuff outside the game. It is set in a fantasy world, with fantasy creatures and fantasy characters, that have fantasy powers, so nothing irl related here.
The game is about slaying demonic creatures and character builds.
And by "character builds" I do not mean "gender" or "sex". I'm speaking of combining skills and items in a smart way...
Like sorceress has fire/frost/lightning nodes while witch has minions/physical/chaos nodes.
This can orient your early game build.
You need to try harder and be edgier. That's how cookie crumbles.
