Then upgrade your main weapon if you can and the rest of your stuff too. But really, that boss is mainly a strategy check.
Get better gear. I understand this is easier said than done during campaign, I struggled with gear all the way to maps. Campaign is very stingy with drops and it can take long to get even minor upgrade. Do not be afraid to use blue items as magic item with two good stats will be much better than badly rolled rare. Find a zone where is a minor boss and repeatedly kill it. There is a zone before the final boss of Act 1 where you can kill the executioner. You will quickly learn the lay out and repeatedly kill him. He can drop you some decent upgrades.
this particular part of the fight always killed me until I learned how to dodge to avoid most of that damage. of course you also need AoE to kill the wolf spawns during that part of the fight or they can also kill you.

you dont really need to upgrade much
you only need some cold resis and then you need to learn the boss.
While you can overcome challenge with gear in POE2 the first couple fights on a new char when you dont have gear you instead need some mechanical skill on keyboard.
The fire guy on Floor1 of that last map is level 16 and has good drops
if you want to farm then this guy is the best to farm.

I finally grabbed a friend to get me through. Even with twice the boss health in co-op his mercenary put the Count away.
My monk seems like a glass cannon with combined life (386) and ES (18) of 404. I guess I've made some big mistakes in my build but not obvious yet what they are. (My level 17 Sorceress has 1,009 and four skeletons to protect her).
I think it would help if the monk's evasion (71%) gave more protection from DOTs, AOE and direct elemental hits.
And yes, the cold resistance rings and Sapphire Charm will help. My cold resistance only 7%
Sadly, my hand-eye coordination just barely good enough for a Path of Souls-like game (I'm in my 70s). Very easy for hands to slip. Obviously, this is not the devs fault. But the weak dodging mechanic puts a filter on how many people can play and enjoy the game.
