Does anyone know?
I'm playing on a warrior, I have 3600hp, 80% armor, 75% resistance to everything, but I'm still catching random mob's oneshot. Why???

The way POE works, same in POE 1, just happens.

All ARPGs have this issue not only POE.
Eventually endgame is you one-shot the whole screen before anything on the screen will touch you and one-shots you.
No one figured how to solve this in 25 years of ARPG development.

That beings said HP and Armour only do not to seem really viable in current state of POE2.
If you look at endgame builds 90% of them run energy shield.
They need to do some balancing on the defenses.

Because you are playing a warrior in a game that hates melee. Also, because life build sucks right now. You need 15k ES to chill.

Yeah, stacking ES, coupled with MoM and EB, is the go-to meta regarding defensives in this game, but armor is far from "useless", it just scales bad with high damage. The intention of armor is to protect you from multiple smaller hits, so you can just stand in a bulk of trashmobs and not worry a bit, but any high-powered attack will go through armor easily.
So the only way to make armor "work" is to combine it with other measures like Evasion or ES, diminishing incoming damage overall and have you less worried over trash (until they got on-death-effects :P). Max resist (with extended max above 75%) is pretty much mandatory anyway.

So while armor is imho in a somewhat bad spot for endgame, throughout most of the game (campaign and first few levels of maps), it does work quite well, playing a Merc with Armor/Eva, when I started out with 2/4 parts eva and the other 2 eva/armor, when I added some more armor and went armor/eva on all 4 armorparts, the reduction in incoming damage was clearly noticeable.

The intended mechanik of being used against smaller hits is mostly ok for me, only the scaling into endgame feels horrible.

Do you recall what the waystone modifiers were?
I would advice you to use a shield and get 75% block and take the node which gives you at least 20hp per block, and the node that makes you recover faster after blocking not not feel stunlocked from doing attacks, it helps a ton! Also, there is a shield called Surrender which gives you 4% health for each block, really crazy shield, not really needed but you get full health from just standing next to enemies!

Oneshots are usually from standing in some magic ability or taking a blow from some very strong melee enemy that winds up an attack. It is even worse without a shield because you will have that crazy burst damage + hits from enemies at the same time.

Almost every warrior plays with a shield, because armour is trash! Enemies will melt you unless you block the majority of all hits. You need an insane amount of health to rely upon armour as your only defence. Armour should go to 90-95% for less armour needed if it should be usable as it is right now because you can currently not play without a shield unless maybe if you play a totem build which allows you to put totems at the end of the screen to wipe everything before they can hit you.

There is a shield that makes you take 20% of the damage blocked and you will pretty much instantly die if you use this shield, it reduce 80% just like armor but you just die..

This is why PoE2 has early access period. Life is currently severely under-tuned due to fact you can not get modifiers to increase it on skill tree. I like the idea GGG had to remove life modifiers from skill tree, they just incorrectly judged how much health should be available on the gear. You currently can not scale your health high enough to give in combination with damage mitigation to give you enough effective health pool (EHP) to survive the end-game. This issue is compounded with armor currently being very week, which means your EHP is poor.
Even energy shield is not perfect but you can at least scale it enough with skill points to get enough to get hit. You still want some form of damage mitigation or damage avoidance to pair it with energy shield, which is why hybrid evasion and energy shield builds are very popular.

I play Frost Strike Monk on SC trade league and currently have 2.6k HP, 1.6k energy shield and 80% chance to evade hits. This is enough for T15 maps, even +2 due to corruption and irradiated mods, or trials. Monster hits are not really a problem while mapping but ground effect or on-death effects are still dangerous as a pack of lighting heralds (or whatever is the mod name) can kill me in split second if I do not pay attention.

Those are rookie numbers. Folks reported being one-shot with 6k hitpoints + 5k energy shield :lunar2019crylaughingpig:
Life alone is only decent if you can get 5000+ so that you can recover health before you are dead. ES is crazy overtuned compared to life and you can stack it like a maniac within the talent tree, you can not stack life without spending a ton of currencies. I need to use a shield on my warrior, armour does not matter that much, it is good to have 80% but it does not really protect much alone.

You can't just rely on the most basic baseline defenses. Its balanced around 75% res, so that's basically like having no special resistances in end game. There's many layers of defense. Increase resistance caps, energy shield, damage reduction, block. If all you have is health, armor, and standard resistances, you're gonna get one shot fairly often. Hopefully they tune the balance a bit though to make it less punishing, as it's pretty damn hard to get all those layers up.
